Zenag Chicken Vegetable Soup

Zenag Chicken Vegetable Soup

  • 2 x tablespoon oil
  • 2 x chopped carrots, peeled
  • 1 x brown onion, peeled and chopped
  • 2 x green capsicum, chopped
  • 4 x garlic cloves, crushed
  • 1 x tablespoon fresh parsley
  • 1 x teaspoon black pepper, grounded
  • 1 x teaspoon salt
  • 4 x cups water
  • 2 x maggi chicken stock cubes
  • 2 x kaukau or potatoes, peeled, chopped.
  • In a medium bowl, place the Zenag soup pieces into it and set aside.
  • In a large saucepan with lid, heat 1 tablespoon of the oil over medium heat.
  • Add the carrot, onion, capsicum, garlic, and parsley, black pepper and salt.
  • Cook for 7 minutes, stirring occasionally.
  • Remove vegetables from the saucepan; set aside.
  • Add the remaining 1 tablespoon oil to the saucepan, heat over medium heat.
  • Add the Zenag chicken Soup pieces; cook for 5 – 10 minutes or until browned; stirring occasionally.
  • Return vegetables to the saucepan with the Zenag Soup Pieces.
  • Stir in the water and Maggi chicken stock cubes.
  • Bring to boiling; stir in potatoes or Kaukau.
  • Return to Boiling; reduce heat. Cover and simmer about 15 minutes or until potatoes are tender. Stir in fresh basil and parsley. Serve in soup bowls.

Cooking Time: 15 minutes
Serves: 6
